Caramelized onion soup with apple syrup, croutons with cheese melts

Ingredients :

- 15 ml (1 T. spoon) Butter
- 30 ml (2 T. spoon.) huile
- 2 Onions chiselled
- 2 Onions cuts in cubes
- 1 leek chiselled
- 60 ml (1/4 cup) Apple syrup
- 180 ml (3/4 cup) white wine
- 125 ml (1/2 cup) apple cider
- 1 L (4 cups) chicken broth
- 500 ml (2 cups) beef broth
- 1 Fresh oregano branch
- 1 Basil branch
- Salt and pepper to taste
- 1 Baguette of stale bread cut into croutons
- 500 ml (2 cups) Melted cheese already grated (Kingsey is my favorite)

Method:

In a large pot, heat butter and oil. Add herbs, onions and leek. Season. Sweat during 15 to 20 minutes gently (mix occasionally)

 

Add apple syrup. Mix well, Caramelize for 10 to 15 minutes.

 

Deglaze with the white wine. Wet with the cider, the broth of chicken and beef. Bring to a boil. Cook gently for 10 to 15 minutes.

 

In oven-proof bowls, fill with onion soup. Add croutons of bread and put a filet of apple syrup of the Cataphard orchards.

 

Bake at 180C (350F) 25 to 30 minutes.

 

Serve at the end of the oven and decorate with fresh herbs.
